At Indian Delight, our customers often ask this question “what is the one dish that you are most proud of?” Well, every cuisine that we serve at our little café is close to our heart but when it comes to picking the best, our answer is “Rogan Josh”. We are proud that we have mastered a dish that has a rich history and is one of a kind.
It would not be wrong to say that Rogan Josh is the King of Kashmiri Wazwan – a 36-course ceremonial and traditional Kashmiri feast. Though the dish originated from Kashmir, over time it became extremely popular in mainland India and became an integral part of mainstream Indian cuisines.
The history of Rogan Josh is very interesting. It dates back all the way to the times when the Indian Sub-Continent was ruled by Mughals. The Mughals ruled from the Capital Delhi and one of their favorite destinations to escape the scorching heats of Delhi during summers was Kashmir.
It was when the Mughal King Jahangir visited Kashmir that Rogan Josh became popular to the world. The king was introduced to several Kashmiri cuisines. He liked most of them but Rogan Josh became his highness’s favorite and was later included in the royal menu.
One most common misconception about Rogan Josh is that it is inspired by the Mughal Cuisines. That is not true at all as we just told you that in fact, it was the Mughals who inherited the dish from Kashmir. The fun fact about almost all Kashmiri Cuisines is that they do not have many similarities with mainland Indian Cuisines. The Kashmiri Cuisines are more on the Persian Side. Because of the Silk Route and the trade ties, Kashmir was more connected with Persian cuisines.
The recipe is pretty simple but includes herbs that are native to Kashmir. At Indian Delight, we prepare Rogan Josh in a delicate process that imbues it with a spellbinding taste.
